SFDA inspectors do not just check that your pasteurizer reaches 72°C. They check whether you can prove it reaches 72°C, every cycle, traceable. Here is the validation file every Saudi dairy plant should keep current.

1. Thermal validation report (annual)

Probes calibrated against an external reference, multiple cycles logged, hold time and temperature within spec for 100% of records.

2. Probe calibration certificates (twice a year)

Each PT100 probe traceable to a national standard. ISO/IEC 17025 lab if possible.

3. CIP effectiveness verification (quarterly)

ATP swabs or microbial counts after CIP. Documented thresholds, action limits, response actions.

4. Operator training records

Each operator certified annually on safe pasteurization, deviation handling, and emergency response.

5. Deviation log

Every cycle that fell outside spec, what was done with the milk, root cause analysis. SFDA inspectors love this log.
